This highly anticipated venture, set to open in October, is the latest project from Sam and Riene Gelman, the owners behind the nationally acclaimed Webster, and marks their new partnership with Edwin Lee. Together, they are bringing an innovative and fresh dining experience to Iowa City’s Northside neighborhood with a ramen shop and cocktail lounge.

Paper Crane emerges from a collaboration between the Gelmans and longtime team member Edwin Lee, who has been an integral part of the Webster’s kitchen since its opening. In this new role as Chef Partner, Lee will lead the kitchen, offering his personal take on ramen, developed through successful pop-up events at the Webster. Lee’s menu will bring a dynamic range of ramen offerings, including both traditional and seasonal selections, to a city where this style of cuisine has been underrepresented.
